Eat your veggies!!!!! Is that what you want your kids to do.... Eat vegetables without fuss and protest...
Just like other kids ,, my Braiden and Bianca are not fond of veggies,,, Braiden is more fussy than Bianca, but he eats lettuce and raw snap beans and that's it..
So I just wish he would eat more veggies .. So when I saw Jessica Seinfield on Oprah before promoting her book Deceptively Delicious I decided to try her recipe..
the way she incorporate the veggies into the food is to either puree or mash it and add that with the other ingredients..
And one afternoon I tried this recipe for Braiden and amazingly he ate it...
CHOCOLATE CUPCAKE ( With AVOCADO and CAULIFLOWER)
Non stick cooking spray
1 cup avocado puree
1 1/2 cups sugar
1 cup nonfat ( skim) milk
2 tsp pure vanilla extract
1/2 tsp balsamic vinegar
2 large egg whites
2 cups all purpose flour
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 ( 8 ounce) package reduced fat cream cheese ( I used Philadelphia cheese)
1/2 cup confectioners' sugar
1/4 cup cauliflower puree ( steam it first and then puree)
2 tbsp pure vanilla extract
1/8 tsp salt
1. Pre heat the oven to 350F Coat a 12 cup muffin tray with cooking spray
2. In a large mixing bowl beat the avocado puree, sugar, milk , vanilla and vinegar till smooth. Beat in the egg whites one at a time just until incorporated.
3. Add the flour, cocoa, baking soda and salt and mix till smooth. Divide the batter among the muffin cups. Bake till the top are lightly browned and spring back to touch 15-20 mins.Turn out onto the rack to coo before frosting.
4. For the frosting, beat together the cream cheese, sugar , cauliflower puree, vanilla and salt till smooth . Spread over the cooled cupcakes.
Serve it and enjoy it!!!!!!!! It is really yummy,, you cannot even taste the cauliflower,, and the avocado..
